Freezing: - 18 degrees Celsius
Shelf life: 12 months
Preparation:
A portion of pulp for three of water.
Examples:
- For a kilo of pulp (bag) add 3 liters of water and sugar
to taste. **
- For a portion of 100 grams add 300 cubical cms of water
and sugar to taste
- For a bag of 230 grams add 690 cubical cms of water and
sugar to taste.
Note: The water can be replaced totally or partially with
milk to prepare sherbets
Yield:
From 1 kilo of pulp, 4 Liters of juice are obtained (20
glasses of 200 cc)
From 100 grams of pulp 400 cc of juice are obtained (2
glasses of 200 cc)
From 230 grams of pulp 920 cc of juice are obtained (4.6
glasses of 200 cc)
Add sugar to taste.
** With the strawberry, pineapple and papaya only 2 liters
of water.
SENSORIAL
Appearance: Uniform, free of strange materials, admitting
a separation of phases and the minimum presence of pieces,
dark particles characteristics of the fruit.
Color: Intense and homogeneous, similar to the one of the
fruit of which the product has been extracted, displaying
a slight change of color.
Aroma: Characteristic and intense of mature and healthy
fruit. Free of strange scents.
Flavor: Characteristic and intense of mature and healthy
fruit. Free of any strange, bitter,
astringent or fermented flavor.
Consistency: It must feel
fluid and homogeneous in the mouth, without foam or
strange particles
Shelf
Life: A year in freezing
conditions, without interruption of the cooling chain.
Packing and Presentation:
Plastic polythene bags and/or containers according to
product line.
Handling and Transportation:
The products are packed in cardboard boxes according to
the product line. The product must be handled in minus 18
degrees Celsius always conserving the cooling chain.
